You have seen it on bags. You have probably wondered how much it actually matters.
The roast date is simply the day the coffee was roasted. Easy enough. But here is where it gets interesting.
Freshly roasted coffee is not immediately ready to shine. After roasting, coffee needs time to degas, which means releasing carbon dioxide that builds up during roasting. Brew it too soon and flavors can taste sharp or uneven. Wait too long and you risk losing the vibrant aromatics that make great coffee special.
So what is the sweet spot?
It depends. Different coffees, roast levels, and brewing methods all play a role. The idea that “fresher is always better” is not the full story.
